Your exclusive after-hours tour begins on board, as your host pours you a glass of the JCB #21 Brut sparkling to accompany your first course on the Wine Train: a tower of local cheeses and artisan charcuterie, tapenades, and crostinis. What a welcome!

At Raymond Vineyards, explore the winery from the inside out. First, a short tour of the Theater of Nature, to discover organic and Biodynamic farming. Learn about the interplay between the soil, the vines and other plants, animals, and the vineyards as a holistic system in harmony with the calendar and the moon. Does it make a difference? Let your taste buds decide!

Next stop, the Crystal Cellar. Just like a typical working cellar. Except for the gorgeous Baccarat chandeliers hanging from the ceiling and the extraordinary collection of historical crystal decanters. The Crystal Cellar showcases the vineyard’s finest wines, and for you, amidst the glow of the crystals and steel, and glass, a tasting of Raymond Vineyard’s Small Lot White Meritage and a tour. Then it’s off to the estate’s blending room to see a day in the life of a winemaker, learning the art of winemaking. Get a glimpse of the place where vineyard guests can experiment and blend their own red wine creations. And even take home a bottle of their own special blend.

After exploring these exquisite spaces, you’ll be escorted to the beautiful Sycamore Grove, where a two-course dinner awaits under the stars. First, local Petrale sole with estate sunchoke purée and herb salad with lemon caper brown butter, paired with Raymond Generations Chardonnay. Then, lemon thyme roasted hangar steak with wild mushrooms, marble potatoes, and foie gras bordelaise, accompanied by a limited production cabernet sauvignon from their District Collection. (Accommodations made for special dietary needs).

All good things must come to an end. We say good-bye to our friends at Raymond Vineyard with a taste of the 2015 Generations Cabernet Sauvignon (rated 98 points by Robert Parker). Sample something you’d like to have more of? Purchase wines to bring or have shipped home. We hope you saved room for dessert! Back on board the Wine Train, enjoy , with Sea Salt Caramel Panna Cotta, almond dragrees, dark chocolate sauce, Amarena cherries, with the 2XXX Napa Valley Wine Train Cabernet Sauvignon.
